OK those who are serious about 2013 better start getting your themes in to Loydene to get what you want -- there will be only ONE tutu and slippers, and whoever is first gets it. We are already receiving themes, apparently this one is going to VERY popular!

Jean, I can only say I am planning on it. I hope the business stays busy as it has been the past few months, but I am also hoping that I will get time to start and complete. projects. We will see what life brings next year.

Need some advice folks. I have been using the Ateco soft gel white paste food coloring mostly for highlights when I paint on fondant. I will need to paint a large area on a dark blue piece. In the past the gel has not dried uniform and has cracked in places. Is there another similar item available out there? Any advice is greatly appreciated!!

Also, I am looking for some NEON food colourings; any good American brands out there you can recommend? I am having trouble finding them here. I have stumbled across Americolor, but I'm not sure! Thanks :)

Justin - a lot of the USA food colours do not comply with UK regulations and as such you can not use these colour on customers cakes or any cake that crosses the threshold of your home.

I think I saw an episode of Food Network Challenge where they put quinine in colored piping gel and it glowed in the dark when the lights went off!! I need to try that one :-D

If the label shows Red 3 etc and not 'E' numbers then it can not be legal used/sold in the UK

Justin in the 1990's we (the UK) lost a lot of food colours as they were re classified as not safe for food use. The USA still use the coloring that we can't.

No Justin I am onboard with it, people are using dusts here that contain glass and plastic and have no sense of responsibilty, sooner or later there is going to be a massive court case here. Rules prevent that and usually they are put in place because some moron didn't use commonsense.

There's SO much to be aware of in cake decorating! I would love to branch out in to the stack 3d cakes like you see them do on tv; I just Marina Souza post pics on facebook of a class she and James Roselle did down under, and it's an amazing cake, but I wouldn't know where to start with structure and what's acceptable to use really. I am guilty of using glitter on cakes; BUT, I am fully aware of what can happen after reading some literature on it, so will no longer use it as a decorative purpose, even if a customer really wants it!

Justin you are fine using gelatin, acacia based product also pearl dusts are OK except the nasty super greens and blue (oxides) and beware of those who sell with a play on the word edible -- which usually means it is not edible. "for decorative use only would be fine on removable items, BUT you can't stop the dust migrating onto the cake. I keep to safe colours, not interested in going to court and Christine knows everything from your side so be sure to ask her if you are not sure.

Liz, it was Mary Maher who used quinine, in the 70's our drinks were neon because quinine was in G & T's, now they have substitutes. It was more fun and I am still here I drank a few of them at the time.

OK, thanks for that! It's always nice to have more input into situations. I don't usually use dusts on cake, just on decorations, but that's down to being scared at messing up. I need to be a bit more adventerous with my cake coverings.

Justin people over here use 4-inch brushes painting their entire cake and then the decorations to be! Talk about overkill and if they only knew every flaw is magnified 10x the bride doesn't care, but the judges love it, they don't have to look too hard to see what's wrong.

I agree with Kerry, keep sugarcraft as a hobby. It always sounds nice ‘decorating cakes for a living’ but the reality is that you have to create cakes you hate, create cakes when you would prefer to be doing other things. The knock on effect from this is the fact you can end up hating the craft you once loved

Sounds true with the creating cakes you hate thing! I enjoy it, but I do think when some people ask me to do cakes that I won't enjoy it, that's when I say no! I would like to work somewhere though that does make elaborate cakes, just so I can progress myself at home.

As a general rule its cake boards and dowels, and food grade silver covering paper (not tin foil) Sometimes if making a tall tower (all cakes the same size) you will add a lynch pin to the above (I tend to use the extra thick cake dowels which are 12inches in length and 1/2 inch thick). Years ago I made a 3D standing sheep the legs/plinths where made from wood all of which needed to be covered with board covering paper. Due to gravity certain parts needed to be made from Styrofoam this again was covered with food covering paper ie needed to create a sealed unit before place any cake.

I'm super excited to be going to OSSAS this year and am eagerly planning my entry for headgear, hats and headbands. I'm unfamiliar with the how to's of OSSAS since this will be my first time. What category should I enter my piece in? I want to do a sculpted cake but is the theme only for wedding cakes?
 
 
 
Hi Liz the theme is primarily the wedding cake category but you can enter your design in the lower division under sculpted cake

You will have a great time. This will be my third year attending. I was going to take a cake last year but became a foster parent to a 7 month old and a 18 month old the little over month before and so all my time to work on a cake went OUT the window. But I hope to this year. As Kerry said it is like a reunion. I met some of my friends there from last year from my first year and it was so awesome to see them. We keep in touch through facebook.

Kerry, it's a huge conference that happens once a year and they roll out all the newest apple gadgets, gizmos and fun apps at really good prices because its all new and they are trying to create hype. Most people have booths where they talk all about their product and you can actually ask the makers how and their product works straight from the developers. Lots of nerdy fun :)
